Shiba’s Saffron Rice Pudding (Kheer)
Recipe: Bring ½ gallon whole milk to a boil in a heavy bottom sauce pan stirring occasionally. Add thoroughly washed premium quality BASMATI rice. Cook the rice till it gets half cooked. Add Shiba’s Sweet Spice and Saffron mixture (supplied). Stir from time to time. Turn the heat down to less than medium. In a different pan, heat 1 Tbs. Shiba’s Ghee; toast nuts packet (supplied). Add 1 cup grated carrot and cook for about 2 minutes. Add raisins, 1/3 cup brown sugar and mix well. Transfer from the pan into the sauce pan and cook till it gets soft and creamy. Add 2 Tbs. Shiba’s Ghee, Serve hot or cold as desert, snack or breakfast. Serves 8. Cooking Time 75 mins. For liquid kheer add extra boiled milk.
